This Tortellini Pasta Salad combines delicious cheese tortellini with fresh veggies and Italian dressing, perfect for a quick and satisfying meal. It’s a colorful, flavorful dish that’s great for gatherings or a simple weekday dinner.

- 1 (20-oz) bag refrigerated cheese tortellini
- 1 cup italian dressing
- 1 (8-oz) package sliced hard salami, chopped
- 1 (8-oz) container mozzarella pearls, drained
- 1 (6-oz) can sliced black olives, drained
- 1 red bell pepper, cleaned and chopped
- 1 (10-oz) container cherry tomatoes, halved
- ¼ small red onion, thinly sliced
- ½ cup shredded parmesan cheese
- ½ cup fresh basil leaves, thinly sliced
Instructions
- Prepare a large salad bowl to comfortably toss all the ingredients.
- Cook the tortellini according to the package directions. Drain and rinse under cold water, then drain again thoroughly.
- Place the drained tortellini in the salad bowl and mix with ½ cup of the Italian dressing. Set aside.
- While the tortellini sit in the dressing, chop and prepare all remaining ingredients, adding them to the bowl without mixing yet.
- Add the remaining ½ cup of dressing to the bowl. Toss the salad well to combine all ingredients.
- Cover and refrigerate for 30-60 minutes before serving. Toss again before serving, adding extra dressing or olive oil if needed. Garnish with additional basil and parmesan if desired.
Notes
This salad tastes even better if allowed to chill for an hour to let the flavors meld.
