- 2 cloves garlic
- 1 tablespoon balsamic vinegar

- ¼ cup sun dried tomatoes, chopped and drained from olive oil
- 3 tablespoons almond milk, or regular milk
- ¼ teaspoon salt
- â…› teaspoon ground black pepper
- 2 tablespoons pasta water
- 8 oz. whole wheat linguine
- ½ tablespoon olive oil
- ½ yellow onion, thinly sliced
- ½ cup fresh basil, chopped
- ¼ cup sun dried tomatoes, chopped and drained from olive oil
- ¼ cup freshly grated parmesan cheese
Instructions
- Cook the linguine pasta according to the package instructions. Reserve one cup of pasta water before draining and set aside.
- Combine all sauce ingredients in a blender and blend until smooth. If too thick, add a little more almond milk or pasta water as needed.
- In a large saucepan, heat ½ tablespoon of olive oil over medium-high heat. Add the sliced onion and sauté until translucent.
- Add the cooked pasta and blended sauce to the saucepan and mix thoroughly.
- Incorporate the fresh basil and additional chopped sun-dried tomatoes into the mixture and combine.
- Finish by drizzling balsamic vinegar, adding a sprinkle of black pepper, and top with Parmesan cheese if desired. Serve and enjoy!
