Description

Zucchini Hamburger Casserole is a delightful dish featuring tender zucchini, savory ground beef, and melty cheese—perfect for a quick and satisfying meal.


Ingredients

  • 1 tablespoon olive oil
  • 2 to 2½ pounds zucchini (about 3 to 4 medium)
  • ¼ teaspoon salt

  • 1 pound lean ground beef
  • 1 small yellow onion (finely diced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 (24 ounce) jar pasta sauce
  • 1 (14.5 ounce) can petite diced tomatoes (gently drained)
  • 1 egg
  • 2 cups shredded Italian cheese blend
  • ¼ cup milk

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish and set aside.
  2. Slice the zucchini in half lengthwise and then into ½-inch moons.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the zucchini, salt, and black pepper. Cook for 3 to 6 minutes, stirring occasionally, until the zucchini begins to soften. Transfer to the prepared baking dish.
  4. In the same skillet, cook the ground beef and diced onion over medium-high heat until fully cooked. Drain excess fat.
  5. Stir in the Italian seasoning, garlic powder, pasta sauce, and diced tomatoes. Pour this mixture into the baking dish and combine gently with the zucchini.
  6. In a small bowl, whisk together the egg and milk. Incorporate the shredded cheese until well coated with the egg mixture. Spread this cheese mixture evenly over the casserole.
  7. Bake for 25 to 30 minutes until the casserole is hot and bubbly and the cheese topping is melted and lightly browned.
  8. Allow to rest for 10 minutes before serving to let the juices thicken.

Notes

For extra flavor, consider adding your favorite vegetables or spices to the ground beef mixture.
This casserole can be prepared ahead of time and stored in the refrigerator before baking.
Serving with garlic bread or a side of pasta adds a wonderful touch.
